7 Fall Desserts That Will Cure Pumpkin Spice Overload

Including A Highly Addictive Feuilletine Crunch That Will Change Your Life

November 11, 2015

In the year that pumpkin pie spice jumped the shark (ahem) the last thing any of us wants to make or eat for Thanksgiving is a pumpkin pie. Let the pumpkin spice backlash continue with these 7 desserts that scream, “fall is here,” but won’t make your guests scream, “enough with the pumpkin spice!”

1. Flavors of Fall

This contemporary plated dessert offers all of the beloved flavors of fall (hence the name!) without all the weird artificial flavors found in some of the more disturbing pumpkin spice products. We’re looking at you, pumpkin spice vodka. Pecans, pumpkin, sweet potatoes, and warm autumn spices appear in surprising textures in this elegant dish.

2. Pecan Pie Tartlets

Pecan pie might be an oldie, but it’s definitely a goodie. Crisp rectangular tart shells and sleek chocolate décor give this classic treat a modern update that would work great on a buffet or as a plated dessert.

3. Spiced Chocolate Mousse

Some people just want chocolate for dessert regardless of the season. These are also generally the people who will always order dessert at the end of a meal, no matter how full they are. So, these people are our friends. Give the people what they want with this cayenne-spiced chocolate mousse. The micro sponge garnish is flavored with cinnamon, fresh ginger, and nutmeg, giving this mousse a decidedly autumnal aura.

4. Pear White Chocolate Verrine

If you like celebrating the season without hitting people over the head with it, this delicate pear verrine is for you. Pears, the forgotten middle child of fall fruits, are lightly sautéed with caramel and layered with creamy white chocolate panna cotta and crunchy cinnamon streusel.

5. Pecan Pumpkin Tarts

Brown butter pecan pie filling is topped with pumpkin-vanilla bean crème brulée in this Pinterest-y dessert. To create the pumpkin appearance, the custard is shaped in a flexi cannelé mold, garnished with golden mirror glaze, and adorned with a bit of modeling chocolate and an edible leaf appliqué. It’s just too darn cute!

6. Gluten-Free Apple Upside Down Cake

Show a little love to your gluten-free guests with this autumnal spin on a classic upside down cake. Gluten-free butter cake gets a fall facelift with a little amaretto paste, cinnamon, and almond flour, then it’s topped with caramelized granny smith apples. How bad can that be?

7. Spiced Mousse Layer Bar

This elegant dessert keeps it classy while hitting a variety of enticing flavors and textures. Spiced almond cake packed with candied citrus peel and a lightly spiced mousse give this dessert depth, while a mandarin crème and orange gelée offer a balanced brightness. And let’s talk for a moment about the spiced cookie feuilletine crunch. Whether you’re addicted to feuilletine (guilty) or Speculoos spread (guilty again) this crunchy component is going to start popping up in everything you make. Take that, pumpkin spice!
