Mini Tomato-Orange Popsicles

Tomato Juice		9oz (255g)
Caraman Blood Orange Purée (583106)		9oz (255g)
Vegetable Oil		0.2oz (7g)
Salt		Pinch
Lemon Juice		0.5oz (14g)
Texturas Agar (622009)		0.1oz (3g)

Combine all ingredients in a saucepan and emulsify with an immersion blender. Bring mixture to a boil. Dispense the mixture into the Silikomart Mini Pick Mold (591069) insert Silikomart Mini Ice Cream Sticks (591055), and freeze or blast freeze until frozen. Remove from mold and serve.

Mini Basil Popsicles

Texturas Agar (622009)		0.1oz (3g)
Celery Juice		15.9oz (450g)
Basil		2oz (56g)
Vegetable Oil		0.4oz (10g)
Salt		Pinch
Black Pepper		Pinch

Combine all ingredients in a saucepan and emulsify with an immersion blender. Bring mixture to a boil. Dispense the mixture into the Silikomart Mini Kube Molds (591067) insert Silikomart Mini Ice Cream Sticks (591055), and freeze or blast freeze until frozen. Remove from mold and serve.

Lime Juice		0.5oz (14g)
