Gluten-Free Spiced Apple Upside Down Cake

Brown Butter

Peel, core and slice the apples. In a sauce pan make a dry caramel with the sugar. Once desired caramel color has been achieved, add the brown butter and stir in the cinnamon. Add the apples and cook for 3-5 minutes or until they are just starting to soften. Remove pan from the heat and allow them to cool.

Gluten-Free Spiced Cake
Confiseur Gluten-Free Yellow Cake Mix (653003)

Butter, Softened

Frutta Prima Vanilla Bean Marinade (069001)*

1/2 tsp (5g)
Braun Royal Amaretto Paste (633310)*

Place all ingredients in to the bowl of a stand mixer and paddle together on low speed for 1 minute. Scrape the bowl and increase the speed to medium, mixing for an additional 5 minutes. Place 4-5 Caramel Apple slices in the bottom of a Silikomart Flexi Muffin (591010). Scoop the spiced cake batter on top of the apples and bake at 350ºF/ 177ºC for18-25 minutes or until done.

Allow Gluten-Free Spiced Cake to cool completely before unmolding. Unmold and arrange on a plate with Caramel Sauce and Raisins. Top with White Chocolate Mikado.
