Crab Salad

Lump Crab meat, Picked Clean		16oz (453g)
Red Onion, Diced		1/2 each
Tarragon Bunch, Chopped		1/2 each
Lemon, Juiced		1 each
Mayonnaise		1.1oz (30g)
Spicy Brown Mustard		0.4oz (10g)
Salt		As Needed
Pepper		As Needed
Crab Seasoning		As Needed
Paprika		As Needed
Champagne Vinegar		As Needed

Combine all of the ingredients together in a bowl, and season to taste with the salt, pepper, crab seasoning, paprika, and champagne vinegar.

Crab Salad

Napa Cabbage, Julienned		As Needed
Artisanal HUG Straight-Edge Savory Tartlet, Mini Triangle (647241)		83 each

Place a small amount of the julienned cabbage into each tartlet. Top with the Crab Salad and garnish as desired.
