1.1 oz Lemon juice 30 g Lemon juice

Combine the mango purée, passion fruit purée, sugar, glucose, and pectin powder in a sauce pan. Bring the mixture to a boil for 3 to 5 minutes.
Remove from the heat and whisk in the lemon juice. Allow the marmalade to cool completely.
