Directions
- Combine the milk, sugar, and mint leaves in a saucepan and bring to a boil. Remove from the heat, cover the pot, and allow the mixture to infuse for 30 minutes.
- In a separate bowl, temper the egg yolks with the warm milk mixture and return the mixture to the saucepan. Whisk in the ice cream stabilizer and cook until the temperature reaches 183ºF/84ºC, stirring continuously.
- Strain, cool and refrigerate the ice cream base overnight. Process in an ice cream machine as directed and then, fold in the dark chocolate mini curls. Freeze.
