Directions
- Combine the glucose, first amount of cream, scraped vanilla bean, and mint in a saucepan and bring the mixture to a boil. Remove from the heat, cover the pot, and allow the mixture to infuse for 30 minutes.
- In a separate bowl, strain the cream mixture over the white couverture coins and emulsify. Then, add the final amount of Heavy cream. Strain the ganache again and refrigerate overnight.
- In the bowl of a stand mixer, fitted with a whisk attachment, whip the ganache for 1 to 2 minutes until fully aerated.
