- Prepare an emulsion with an orgeat syrup base (3/4 orgeat syrup to ¼ single cream 15% fat). Place the emulsion in a siphon, charge twice. Mix all ingredients with the crushed ice in a blender. Serve the drink in a Martini glass. Dispense the emulsion from the siphon in the center of the class. Garnish with a sprig of mint and cover the entire cocktail with a small glass cover.
