Directions
- Prepare a Quadro Plate (850321) by placing a Quadro foil (850322) on top it.
- Combine the Praline Croquantine, first amount of 30% couverture, and the coconut flakes. Spread in a 2.5mm/ 0.1 inch Quadro frame (850324.) Allow to set.
- Melt and temper the Cocos Gianduja and pour over the crunchy coconut chocolate layer in a 5 mm/ 0.2 inches frame (850323.) Leave to crystallize.
- Melt the Mangonosa to 35°C/ 95°F and pour over the Cocos Gianduja. Leave to crystallize.
- Spread a thin layer of Sao Palme 30% couverture and cut 2 x 3 cm/ 0.8 x 1.2 inches.
