4.0 oz Cake flour 113 g Cake flour

0.1 oz Baking Powder 3 g Baking Powder

3.4 oz Granulated sugar 96 g Granulated sugar

2.0 oz Vegetable oil 57 g Vegetable oil

2.0 oz Egg yolk 57 g Egg yolk

2.3 oz Water 64 g Water

0.1 oz Pure Tahitian Vanilla Bean Extract 3 g Pure Tahitian Vanilla Bean Extract (596103) (596103) Qty: 1

1.4 oz Honeydew Blended Drink Mix 40 g Honeydew Blended Drink Mix

4.0 oz Egg white 113 g Egg white

1.7 oz Granulated sugar 50 g Granulated sugar

Whisk together all ingredients except for the egg whites and second amount of granulated sugar.
Make a meringue with the egg whites and second amount of sugar.
Fold the two mixtures together gently until homogeneous. Spread evenly onto a half sheet pan that is lined with parchment paper. Bake at 350F for about 10-15 minutes or just until the cake springs back when touched.
Once out of the oven, immediately invert the cake on top of a clean piece of parchment paper cut to half sheet pan size. Roll the cake width wise tightly without cracking the cake. Keep rolled until the cake has completely cooled.
