Combine the pastry cream and milk the bowl of a stand mixer. Paddle together on medium high speed for 4-5 minutes or until smooth. Add in the passion fruit paste and paddle until combined. Pipe the pastry cream into the waffle cups.

Cut fruit and arrange on top of waffle cups. Heat apricot gel and adjust with water to reach desired consistency. Brush fruit with the gel.
