Vanilla Panna Cotta with Strawberry Consommé

Strawberry Consommé
Strawberries

Sugar
4oz (120g)
Lemon Juice

1oz (28g)
Strawberry Juice, Strained
14oz (400g)


Wash and quarter strawberries.  Sprinkle with sugar and add lemon juice. Place in a stainless steel bowl, and cover tightly with plastic wrap.  Place over a pot of simmering water.  Simmer for one hour, allowing strawberries to release their juices. Strain, and discard strawberries.

Vanilla Panna Cotta
Zürimix Panna Cotta (504110)

Half and Half

15.8oz (450g)

Combine Zürimix and half and half in a pot and bring to a rolling boil for 2 to 3 minutes. Pour into the Silikomart Quenelle Mold (591076); freeze completely.

Pour the Strawberry Consommé into a bowl of your choice, then place a quenelle of Vanilla Panna Cotta.  Garnish with sliced strawberries and micro greens.
