Mocha Pot de Crème Spheres
Heavy Cream | 53oz (1500g) | |
Zürimix Pot de Crème au Chocolat (504109) | 10.6oz (300g) | |
Braun Mocha Paste (633305) | 2.6oz (75g) |
Place the heavy cream in a sauce pan and bring it to a boil. Whisk in the pot de crème au chocolat mix and return the mixture to a boil. Remove the mixture from the heat and whisk in the mocha paste. Using a sauce gun, dispense the Mocha Pot de Crème into the Silikomart Flexi Mini Half-Sphere (591004) and place in the freezer. Allow the spheres to freeze completely.
Assembly
While the Mocha Pot de Crème Spheres are still frozen, remove them from the mold and spray half of each sphere with the white chocolate cocoa butter velvet spray. Place each sphere into a tartlet and decorate with a crocodile texture plaquette.
