Ingredients:
maize starch, colors (E101: riboflavin, E110: sunset yellow FCF, E160a: beta-carotene), wheat glucose syrup, vanilla seeds, thickening agent (E410: carob gum, E412: guar gum), vanilla extract* Madagascar.

Country of Origin: Switzerland

Application:

Flavor the pastry cream with nut pastes or fruit purées. Fold in up to 4 parts (8.8lb/4kg) of whipped heavy cream to create a pipeable Bavarian cream. Add vanilla bean powder and thin with whole milk to make créme anglaise. Freeze stable and bake stable.

 

Preparation:

1. Heat 70% of the milk and all the sugar in a saucepan and heat until dissolved.

2. Whisk together Pastry Cream Mix and remaining 30% of milk.

3. Whisk this into the first mixture and boil for another minute. Cool immediately and use as desired.
