Gluten-Free Chocolate Chip Cookies

Combine the cookie mix and softened butter together in the bowl of a stand mixer and cream together using the paddle attachment until smooth. Add eggs in one at a time, scraping down after each addition, followed by the vanilla bean marinade. Fold in the chocolate cubes. Scoop the dough using an ice cream scoop on to a parchment paper lined sheet pan. Bake at 350ºF/ 177ºC for 8-10 minutes or just until set.
