Gluten-Free White Chocolate Macadamia Nut Cookies

Combine the cookie mix and softened butter together in the bowl of a stand mixer and cream together using the paddle attachment until smooth. Add eggs in one at a time, scraping down after each addition, followed by the vanilla bean marinade. Fold in the macadamia nuts, almond flour and white couverture cubes. Scoop the dough using an ice cream scoop on to a parchment paper lined sheet pan. Bake at 350ºF/ 177ºC for 8-10 minutes or just until set.
