Courtney’s career has evolved over the past decade in various roles internship and entry-level pastry chef roles. Courtney currently serves as Executive Pastry Chef at The Union League of Philadelphia, overseeing three restaurants, private dining, banqueting and two offsite properties of the club.
Courtney’s favorite confection to make? Molded and hand dipped bon bons. “I enjoy the challenge of creating an entire dessert in one bite. The flavor, texture, and appearance have to seamlessly come together to create a great piece and the process is fascinating”, says Courtney.
Courtney’s favorite confection to eat? Any confection made with dark chocolate. “I really love it in combination with fresh mint or coconut!”
