Preparation: Due to the high cacao butter content, the product needs to be tempered before for a nice glossy finish. Find the tempering instructions below.
Dissolving – In a warming cupboard or heating unit to 48-50°C Temper two-thirds of the mass onto the marble surface/table until it has a creamy texture.
Return to the remaining mass and stir well. Leave to set for 10 minutes. Processing – between 31-33°C.
Application: Chocolate bars, cookies, brownies, muffins, crème brûlée, pastry fillings and pralines
