Meringue Cookies:
Flavor with cocoa, coffee, or fruit powders; ideal for baked Alaska, soufflés, meringue, pies, and meringue decorations.
Advantages:
Torchable, bake-stable and freeze-stable.
Meringue Cookies:
- Mix Zurimix and water in a stand mixer with a whip attachment for approx. 3 min at medium high speed until it becomes foamy.
- Gradually add sugar and mix for approx. 5 min until stiff peaks form.
- Pipe the meringue batter onto a baking sheet and bake for approx. 120 min at 200°F/93°C.
Royal Icing:
Mix 1 part of Zurimix (2.2 lb/1 kg) with 9 parts (19.8 lb/9 kg) of sifted powdered sugar and with 2-4 parts (4.4-8.8 lb/2-4 kg) of water. With paddle attachment, whip for 1-3 min to reach the desired thickness and consistency
